Soup Season is here! In honor of the start of fall, I launched a plant-based soup series showcasing all my favorite healthy, comfort soups to nourish you through the colder weather and beyond.

The second soup of the series, Mushroom Noodle, is a plant-based update to a childhood classic. Mushrooms, ginger and turmeric provide crazy anti-inflammatory & immune boosting benefits, while onion, basil, thyme and garlic give the soup the classic chicken noodle flavors.
